Apple-Soy Marinated Skirt Steak Lettuce Wraps (Ssam)

An overnight soak in apple juice, soy sauce and garlic turns an affordable skirt steak tender and deeply savory. Sear it fast over fierce heat, slice it thin, and let everyone build their own crisp lettuce wraps with a zingy ginger-scallion relish and a punchy Korean chili-bean sauce.

Tips & tricks

  • Other steak cuts work, but pick one that is not too thick so the marinade can soak in. The recipe is built around skirt steak, a budget-friendly cut.
  • Instead of the ssam sauce, you can serve a kimchi puree: blend 250 g (8 oz) kimchi into a chunky paste.
  • Nutrition is based on 6 servings and includes all of the sauces, which contribute most of the calories through the oil. The meat alone is about 250 calories per serving.
