Golden Sausage and Cheddar Potato Rösti Patties

These little patties take everyday hash browns and load them up with browned sausage, melty cheddar and scallions. The outsides fry up deeply golden and crunchy, and they hold up well if you want to cook a batch ahead for busy mornings.

Tips & tricks

  • Potatoes: floury varieties such as Russet, King Edward, Dutch Cream or Red Delight work best; all-purpose types like Sebago are also fine. Frozen shredded potato is an option where you can find it.
  • Make ahead: cook only until pale golden, cool, and keep airtight in the fridge or freezer. Re-crisp in a frying pan for the best texture, or bake at 200°C/390°F for 8 minutes from thawed or 12 minutes from frozen.
  • Chorizo can be swapped in for the sausage.
  • Use the best-quality sausage you can find, since it carries much of the flavor.
