Thin and Crisp Chocolate Chip Cookies
Thin, golden chocolate chip cookies that snap, made with melted butter, an egg yolk and a spoonful of honey.

For anyone who prefers a cookie with snap, these are thin, golden and crunchy right through. Melted butter, an egg yolk and a spoonful of honey create the crisp texture, and you control the thickness by how long you chill the dough, from not at all to two hours.

Instructions
- 1
If you're baking without chilling, heat the oven to 375°F (191°C) now. Line the baking sheets.
- 2
Whisk the flour, baking soda and salt in a large bowl.
- 3
In another bowl, whisk the melted butter, both sugars, honey, egg yolk, milk and vanilla until smooth. Add to the dry ingredients and mix until no dry streaks remain, then fold in the chocolate chips. The dough will be soft.

- 4
Decide on chilling: skip it for very thin, extra-crispy cookies and go straight to step 5; chill 1 hour for slightly thicker crisp cookies; or chill 2 hours for thicker cookies with crisp edges and softer middles. After chilling, heat the oven.
- 5
Roll scant tablespoons of dough into balls and space them 2 inches apart. Bake for 10-11 minutes, until browned on top and around the edges.

- 6
Leave on the sheet for 3 minutes, then move to a wire rack to cool completely. They'll crisp up as they cool.
Tips & tricks
- Equipment: baking sheets lined with parchment or silicone mats.
- Storage: loosely covered at room temperature, the cookies stay fresh for up to 1 week.
- Make-ahead dough: chilled dough keeps for up to 4 days. Let it come to room temperature, heat the oven and continue from step 5. Dough baked right away gives the thinnest, crispiest cookies.
- Freezing: baked cookies and unbaked dough balls freeze for up to 3 months. Bake dough balls from frozen, adding an extra minute.
- Tools: baking sheets, silicone mats or parchment, mixing bowls, a whisk, a silicone spatula and a cooling rack.
