Tips & tricks

  • Storage: refrigerate in an airtight container, with parchment or wax paper between layers, for up to 10 days.
  • Make ahead: the rolled balls can be chilled for up to 1 day before dipping.
  • Freezing: finished truffles freeze for 2-3 months; thaw overnight in the fridge.
  • Heat-treating flour (required, since the dough is eaten raw): microwave the flour in 30-second bursts, stirring each time, until it reaches 165°F (74°C), then let it cool. Or spread it on a rimmed pan and heat in a 300°F (149°C) oven, checking every 2 minutes, until it reaches 165°F (74°C).
  • The dough uses milk instead of egg and has no leavening. Mini chips are recommended for easier rolling.
