Crispy-Skin Salmon in Sake, Mirin and Soy Marinade
Salmon marinated in soy sauce, mirin and sake, then pan-fried in six minutes for crackling skin and a glossy top.

Just three classic Japanese seasonings, soy sauce, mirin and sake, turn plain salmon fillets into something glossy, savoury and gently sweet. Marinate them the night before, and dinner is a six-minute pan-fry that leaves you with crackling skin and a lacquered top.

Instructions
- 1
Put the salmon, soy sauce, mirin and sake in a zip-top bag, squeeze out as much air as you can and refrigerate for at least 3 hours, preferably overnight.

- 2
Warm the oil in a non-stick pan over medium heat.
- 3
Lay the fillets in skin side down and cook for 2-3 minutes, until the skin is crisp. If it is colouring too fast, turn the heat down or lift the pan off the burner for a moment.

- 4
Spoon the leftover marinade over the top of the fish, then turn the fillets and cook the flesh side for 2 minutes, or until done to your liking.

- 5
Let the salmon rest for a couple of minutes (it will keep cooking gently) before serving.
Tips & tricks
- Keep the heat at medium rather than high: the sugars in mirin scorch quickly and can burn before the fish is cooked through.
- To broil or grill instead: heat the broiler or grill to high, oil a tray, and position the salmon about 5 inches (15 cm) below the heat. Allow roughly 10 minutes per 1 inch (2.5 cm) of thickness at the thickest point.
