Quick Indonesian Sweet Soy Fried Rice (Nasi Goreng)

Nasi goreng gets its signature dark, glossy colour and sticky caramel edges from kecap manis, a thick Indonesian sweet soy sauce. With day-old rice and a handful of staples it is ready in about 20 minutes, and a runny fried egg with fresh tomato and cucumber on the side turns it into a full meal.

Tips & tricks

  • To make it a meal, top each serving with a sunny-side-up egg and add tomato and cucumber on the side; on its own it also works as a side dish.
  • Kecap manis is a thick, syrupy Indonesian sweet soy sauce. To make your own, simmer 1/4 cup soy sauce with 1/4 cup brown sugar over medium heat until it is as thick as maple syrup; it will thicken more as it cools.
  • Chili: two bird's eye or Thai red chilies give a gentle warmth rather than real heat. You can stir chili paste in with the rice instead.
  • Rice: cold, day-old rice is best because it has dried out and fries evenly without clumping. Frozen cooked rice works too.
  • Shrimp paste adds savoury depth but can be skipped. Dried block shrimp paste (belacan) can be used if crumbled and toasted first; fish sauce or extra kecap manis are other options.
  • Fried shallots are an optional, non-traditional garnish.
  • Gluten-free: make your own kecap manis using tamari.
  • Storage: keeps for a day or two in the fridge. Sprinkle with a little water before microwaving to bring back moisture. It can be frozen and reheated the same way.
  • The nutrition estimate includes the fried egg.
