Cinnamon Sugar French Toast Fingers

Thick batons of day-old bread get a quick dip in egg, a golden fry in butter, and an immediate roll in cinnamon sugar, so they taste a lot like cinnamon doughnuts. They're made for dunking in maple syrup and eating with your fingers. Breakfast is on the table in about 15 minutes.

Instructions

  1. 1

Trim the crusts off each slice of bread and cut each slice into 3 even, thick sticks.

  2. 2

In a bowl wide enough to roll the sticks in, whisk together the eggs, milk, and a pinch of salt.

  3. 3

Mix the sugar and cinnamon together on a plate.

  4. 4

Melt 2 tbsp of the butter in a large pan over medium-high heat.

  5. 5

Working in 2 batches, roll the bread sticks quickly through the egg mixture (don't let them soak), let the excess drip off, and lay them in the pan.

Step 6: Cook, turning, until every side is golden.
  7. 7

Move the hot sticks straight to the cinnamon sugar and roll them to coat; do this quickly while they're hot so the sugar sticks.

Step 7: Move the hot sticks straight to the cinnamon sugar and roll
  8. 8

Melt the remaining butter and cook the second batch the same way.

  9. 9

Serve right away with maple syrup for dipping.

Tips & tricks

  • Thickness: Aim for sticks roughly 1.7 cm (2/3") square after trimming and cutting.
  • Use stale bread: Fresh bread absorbs too much egg and goes soggy inside, so the sticks droop when picked up. Cutting thick slices from a whole loaf gives sturdier results; pre-sliced sandwich bread works but sags more.
  • Storage: Best eaten immediately.
